Orange-Sesame Tofu and Fennel Salad

This Orange-Sesame Tofu and Fennel Salad is a refreshing and flavorful dish that combines crispy tofu marinated in a zesty orange-sesame dressing with fresh fennel, juicy orange segments, and mixed greens.

Ingredients:

  • 1 block tofu, pressed and cut into cubes

  • 1/4 cup orange juice

  • 2 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 tbsp rice vinegar

  • 1 tbsp honey or maple syrup

  • 1 tsp grated ginger

  • 1 clove garlic, minced

  • 1 fennel bulb, thinly sliced

  • 1 orange, peeled and segmented

  • 2 cups mixed greens

  • 2 tbsp sesame seeds, toasted

  • Salt and pepper, to taste

Instructions:

In a bowl, whisk together orange juice, soy sauce, sesame oil, rice vinegar, honey, ginger, and garlic to make the marinade


Place tofu cubes in a shallow dish and pour marinade over them


Let marinate for at least 30 minutes, or up to 2 hours


Preheat oven to 400F 200C


Place marinated tofu cubes on a baking sheet lined with parchment paper


Bake for 20-25 minutes, flipping halfway through, until tofu is golden and crispy


In a large bowl, combine sliced fennel, orange segments, mixed greens, and toasted sesame seeds


Add baked tofu cubes to the salad


Season with salt and pepper, to taste


Toss everything together gently


Serve immediately and enjoy!
