Mushroom Bolognese Pasta

A vegetarian twist on classic Bolognese sauce, this Mushroom Bolognese Pasta is hearty, flavorful, and perfect for a cozy night in. Mushrooms add a rich umami flavor to the sauce, while carrots and celery lend sweetness and depth. Tossed with your favorite pasta, it's a satisfying and comforting meal for any pasta lover.

Ingredients:

  • 2 tbsp olive oil

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 lb mushrooms, finely chopped

  • 1 carrot, grated

  • 1 celery stalk, finely chopped

  • 1 can 14 oz crushed tomatoes

  • 1/2 cup vegetable broth

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • Salt and pepper to taste

  • 12 oz pasta of choice

  • Fresh parsley for garnish

  • Grated Parmesan cheese for serving

Instructions:

Heat olive oil in a large skillet over medium heat


Add onion and garlic, saut until softened


Add mushrooms, carrot, and celery


Cook until vegetables are tender and mushrooms have released their juices


Stir in crushed tomatoes, vegetable broth, oregano, basil, salt, and pepper


Simmer for 15-20 minutes, stirring occasionally, until sauce thickens


Meanwhile, cook pasta according to package instructions until al dente


Drain


Toss cooked pasta with mushroom Bolognese sauce


Serve hot, garnished with fresh parsley and grated Parmesan cheese
